This grand appellation charms both the curious seduced by the invocation of the Demoiselles and connoisseurs sensitive to it closeness to the neighbouring white Grands Crus plots. The name Les Demoiselles is an homage to two former owners, Adèle and Julie Voillot, daughters of a former military general in Beaune at the beginning of the 19th century, who lived and died unmarried. This pretty name is used only for the southern part of the plot, which is also registered under another name, Les Caillerets. Les Demoiselles is also used in addition to the Chevalier-Montrachet appellation for wines from the Chevalier Grand Cru plot just up the hillside.
